About Dominio do Bibei Lapola
Dominio do Bibei Lapola is an exquisite white blend comprising Godello, Albariño, and Doña Blanca varietals, crafted by the esteemed Dominio do Bibei winery in the renowned D.O. Ribeira Sacra, Galicia.
Dominio do Bibei represents the passionate venture of María Prieto and Javier Domínguez in the Ribeira Sacra, an endeavor that strives to comprehend, heed, and interpret the nuances of the vines, the climate, and the vineyard itself, forging a synergy that culminates in wines of sensitivity, ones that embody the essence of their terroir while simultaneously exuding finesse and elegance.
The grapes selected for the creation of Dominio do Bibei Lapola are sourced from vineyards with slate soils, with vines ranging from 15 to 80 years of age. These grapes are handpicked and carefully transported in 10 kg crates. The vines thrive in challenging cultivation and harvesting conditions, which, in turn, yield fruit of exceptional quality.
Two rigorous selections take place: one in the vineyard and another within the winery. Fermentation is conducted in concrete vats and wooden foudres. The resulting wine undergoes maturation on its fine lees in French and Austrian oak barrels, as well as in concrete egg-shaped tanks. The wine is bottled unrefined and unfiltered, followed by a period of rest in the winery's cellars before being released to the market.
