Laherte Frères Extra Brut Ultradition is a biodynamic Champagne made with the Pinot Meunier, Chardonnay and Pinot Noir varieties by Laherte Frères in Champagne.
Laherte Frères is a small family Champagne house founded in 1889 by Jean-Baptiste Laherte. Generation after generation, this winery has managed to cultivate its 75 plots to produce sparkling wines with a typical Côteaux sud d’Epernay character. Brothers Thierry and Christian Laherte now carry this legacy, avoiding modern excesses and using biodynamic and organic agriculture.
Laherte Frères Extra Brut Ultradition comes from a selection of the best grapes from 7 plots located in Côteaux sud d’Epernay, Vallée de la Marne and Côte des Blancs. These vines are planted in shallow clay-calcareous soils with limestone on the surface. They use ancient practices in order to respect the environment as much as possible, with organic techniques and biodynamic preparations. The harvest is carried out manually at the optimum point of ripeness.
To make Laherte Frères Extra Brut Ultradition, the grapes are gently pressed in a traditional 4,000 kg press. Alcoholic fermentation and aging take place in different containers and with native yeasts. 60% in French oak barrels, 20% in foudres and the remaining 20% in stainless steel tanks. Malolactic fermentation takes place in parts and it ages on lees for 6 months. Finally, it ages for 20 or 24 months with a low 4 gr. dosage.
