In the case of Domaine de Chevalier, a cru classé in Pessac-Léognan located in a clearing in the middle of a forest, protected from extreme temperatures and far from the limelight, Domaine de Chevalier L'Esprit de Chevalier, a wine managed and produced by Bordeaux ambassador Olivier Bernard, reflects the special mood of such a surprising place, as its name suggests. It comes from a vineyard of a 61-hectare plot whose gravelly soils and excellent sunlight thanks to its north-south orientation, favor the cultivation of the area's master grapes. In the winery, the exhaustively selected grapes are fermented at a controlled temperature and the wine is aged for 12 months in barrels of one to two years of use.
