About Kanonkop Cabernet Sauvignon

The apple doesn't fall far from the tree. And indeed, his lineage could be traced back to his grandfather, Hendrik Cloete, the owner of Groot Constantia, the oldest wine estate in South Africa, nestled in the heart of the Constantia Valley. His father, the politician JW Sauer, also acquired the Uitkyk estate when he was but five years old. In both domains, Paul Oliver Sauer cultivated a passion for wine.

His political career did not deter him from immersing himself in the vinous realm. Despite serving over 41 consecutive years in the South African parliament (16 of which as the Minister of Railways, Lands and Irrigation, Public Works, and Forestry), Paul Oliver Sauer took the helm of these family properties—located a mere 15-minute drive from Stellenbosch Central—which in 1973 became renowned as Kanonkop.

That very year marked the debut of their first wines crafted from pinotage, cabernet sauvignon, cabernet franc, and merlot varietals, flourishing across 95 hectares at altitudes ranging from 180 to 365 meters above sea level, at the foot of the Simonsberg Mountain. Its proximity, 40 kilometers from the Atlantic and 30 kilometers from False Bay, subjects the area to a perpetual influx of cool air currents, delaying grape ripening. Only a select batch from the oldest vines will be chosen to create Kanonkop Cabernet Sauvignon.

As for its craftsmanship, the production of Kanonkop Cabernet Sauvignon is intricate. Clusters are fully destemmed and undergo a triple selection process: in the vineyard, on the vibrating table, and through a computer-controlled optical sorter. Following this, the berries are crushed and pumped into open concrete vats, where the miracle of fermentation takes place. Upon completion, Kanonkop Cabernet Sauvignon is transferred to stainless steel tanks and subsequently undergoes malolactic fermentation in wooden barrels.

Eventually, new or second-fill French oak barrels will be the sanctuaries where Kanonkop Cabernet Sauvignon matures, resting for a period of 18 to 24 months.

Kanonkop Cabernet Sauvignon 2016 is a concentrated, full-bodied red made from Cabernet Sauvignon. The nose and palate present aromas and notes of cassis, cedar wood, blueberry, tea leaves and pencil shavings. It is also worth noting the firm tannins and the dry, flavoursome and persistent finish.
