Julien Guillot Cuvée Aragonite is a natural, ecological and biodynamic, barrel-aged white wine made by Clos des Vignes du Mayne with the Chardonnay variety in the AOC Mâcon-Cruzille, in Burgundy (France).
The Clos des Vignes du Mayne estate has been used for winemaking since 910 when the Benedictine monks worked the land. It was acquired by the Guillot family in 1952. During all this time, they have worked to revive the land without using chemical products. Now in the hands of the third generation; Julien Guillot has 7 hectares of certified biodynamic vineyards and produces natural, pure and elegant wines.
Julien Guillot Cuvée Aragonite comes from 40 to 80 year old vines growing on plots lying high on the hillside and on shallow soils of clay and silica-rich limestone. They are cultivated using organic and biodynamic agriculture, using organic treatments and limiting the yields. The harvest is manual and the grapes are selected in the vineyard itself.
Once the Julien Guillot Cuvée Aragonite grapes have been selected, they are gently pressed and left to rest for 6 to 18 hours. They then ferment with native yeasts and age on lees for 10 months in 600-litre wooden tanks. The wine is finally bottled without being filtered, clarified or adding sulphur.
