Julien Guillot Bourgogne Cuvée Auguste is an organic, biodynamic and natural, barrel-aged red wine made with the Pinot Noir variety by Clos des Vignes du Mayne in the French denomination of AOC Bourgogne, in Burgundy.
The Guillot family acquired Clos des Vignes du Mayne in 1952. A domain located in one of the most beautiful areas of southern Burgundy that has been worked without chemicals, herbicides, insecticides or sulphur for five generations. Keen to continue with this commitment, in 2005 Julien Guillot began cultivating the 7 hectares of vineyards using Demeter-certified biodynamics and making wines in the most natural way possible.
Julien Guillot Bourgogne Cuvée Auguste comes from vines planted in 1964. This is an area that was cultivated by the Cluny abbey monks in 910 and is characterised by its shallow (5 cm to 50 cm) clay and limestone soil with calcareous silts and rich in silica. The team use organic agriculture with plant-based biodynamic treatments. The harvest is carried out manually with very low yields and the grapes are selected in the vineyard itself.
After passing over the selection table, the Julien Guillot Bourgogne Cuvée Auguste grapes undergo semi-carbonic fermentation in whole clusters, spontaneously and with native yeasts. The wine is then aged in barrels without racking. Finally it is mixed in vats and 40 days later it is bottled without filtering, clarifying or adding sulphur.
