



Jean-Yves Péron Le Pas de l'Ours is a natural monovarietal Mondeuse red wine from Savoy produced by Jean Yves Péron.
Jean-Yves Péron is a vigneron producing natural wines who founded his winery in 2004. His vineyards are located at a high altitude in the French Alps, and he cultivates organic plots of Jacquere and Mondeuse vines that are from 115 to 130 years old planted on mica and shale soils so that the grapes ripen optimally. He cultivates without using herbicides or chemical fertilisers. In the winery, he vinifies with native yeasts, practising the philosophy of minimum intervention, and manages to produce first class natural wines.
The vineyards for Jean Yves-Péron Le Pas de l'Ours have calcareous and stony soils. The harvest is carried out manually to respect the grapes as much as possible, and once in the winery, they are vatted whole in order to undergo a carbonic semi-maceration and in this way extract fresh fruit aromas from the grape. The wine is made without using sulphites or using them as little as possible. It ferments and undergoes a light aging in 500 litre used barrels so that the wood does not overpower the wine.
Jean-Yves Péron Le Pas de l'Ours is a fresh and expressive natural red wine that offers fruity and complex aromas which make it very pleasant.
