Hibiscus Zibibbo Grotta dell'Oro di Ustica is a white wine aged on lees and made by Hibiscus with the Zibbibo variety in the IGT Terre Siciliane (Italy).
Located on the island of Ustica, Hibiscus is a small estate with strong links to tradition and the utmost respect for the environment. With the aim of achieving a truly unique character in their wines, the owners have championed native Sicilian varieties like Inzolia, Zibbibo, Catarratto and Grillo and have made the local farming and seafaring traditions their focus.
The Hibiscus Zibibbo Grotta dell'Oro di Ustica wine starts life in volcanic soils at an altitude of 20 to 30 metres above sea level. Their organic cultivation, which follows European regulations, is certified by the CCPB control body and the yields are very low. Renewable photovoltaic energy is also used and the harvest is carried out manually at the optimum point of ripeness.
In the winery, the Hibiscus Zibibbo Grotta dell'Oro di Ustica grapes are gently pressed and the resulting must ferments at a controlled temperature in stainless steel tanks. It then stays there for a few months to finish refining and become an aromatic wine with Mediterranean features.
