Grossot Chablis is a white wine from the AOC Chablis (Burgundy) made by Jean-Pierre Grossot with the Chardonnay variety.
Grossot is a family winery with 18 hectares of vineyards located mainly in the town of Fleys, east of Chablis (Burgundy). Currently run by the third and fourth generation winemakers (Corinne and Jean Pierre Grossot and their daughter Eva), this winery is committed to organic viticulture (with Ecocert organic certification) to produce internationally acclaimed, high-quality Chablis wines.
The Grossot Chablis vineyards are found mainly around Fleys, Chichée and Fontenay. A total of 13 hectares of strains with an average age of 25 years old and mostly facing the north and northwest, planted on clay and limestone loam soil. They practice organic agriculture using natural fertilisers and very limited plant protection methods. The harvest is carried out manually.
After gently pressing the grapes in a horizontal pneumatic press, the Grossot Chablis must ferments in stainless steel tanks at a controlled temperature. It then ages for a long time with lees. Finally, the wine is clarified, filtered and bottled.
