Corinne and Jean-Pierre Grossot are third generation winemakers who now run this family winery in the town of Fleys (Burgundy), a prestigious Premier Crus area. A total of 18 hectares of vineyards that the Grossot family cultivate using organic viticulture (Ecocert certificate) and respecting the environment to make balanced and extremely aromatic mineral wines.
The Grossot Chablis Mont Milieu vineyard is a Premier Cru vineyard where the strains have an average age of 25 years. They use organic agriculture with natural fertilisers, short pruning and as few phytosanitary methods as possible. No synthetic products or fungicides are used. The grapes are harvested by hand.
Grossot Chablis Mont Milieu grapes are gently pressed in a horizontal pneumatic press to ensure the best extraction. The must ferments slowly at a low temperature in stainless steel tanks. Then the wine spends 6 months in French oak barrels.
