About Gaia Wild Ferment Assyrtiko
Gaia Wild Ferment Assyrtiko is a wood-aged white wine made by Gaia Wines with the native Assyrtiko variety in the PDO Santorini (Greece).
Known on the Greek island of Santorini for their prestigious Assyrtiko wines, Gaia Wines is a pioneering project of the modern Greek wine revolution. Set up in 1994 by Leon Karatsalos and Yiannis Paraskevopoulos, their aim is to capture the essence of the island’s native grapes, fusing traditional methods with the most innovative production techniques.
Made from native Assyrtiko vines, the Gaia Wild Ferment Assyrtiko grapes grow using an ancient pruning method called “Kouloura”, in the shape a basket, a practice that dates back more than 3,000 years. The winegrowers weave the vine canes in the shape of a large basket on volcanic soil so that the grapes grow protected within. The climate is warm and the grapes ripen early.
In the winery, the Gaia Wild Ferment Assyrtiko grapes are gently pressed and the resulting must is left for approximately 10 hours in contact with the skins in 1,000-litre stainless steel tanks. Fermentation takes place at a temperature of 10ºC and is then followed by 12 months of aging in small 225-litre wooden barrels.
Originally from the island of Santorini, Gaia Wild Ferment Assyrtiko is a wine that preserves Greek tradition and guarantees a magnificent bottle aging for the next 2-5 years. Minerality and acidity with a long life.
2018 | Gaia Wild Ferment Assyrtiko 2018 is a creamy white wine with aromas of ripe fruit, floral notes of acacia and hints of vanilla. On the palate it is crisp, fresh and mineral. A wine with balanced acidity that brings great depth and longevity. |
