El Grifo Malvasía Lías is a white wine produced by the oldest winery in the Canary Islands (Spain), a project that is located on the island of Lanzarote and has been dealing with fire, wind and rock for more than 250 years to achieve wines with a unique character. Specifically, in this award-winning wine, the malvasia grapes come from four winegrowers in the town of Tinajo who practise heroic viticulture with an exclusive system of cultivation in holes to protect the vine from heat and wind. The grapes are harvested by hand in 18–20 kg boxes and the grapes are pressed without destemming. After a 24-hour static debourbage, the must is fermented with native yeasts and then half of the wine is aged in 500-litre French oak barrels and the other half in stainless steel tanks for 3 months.
