Domaine Montbourgeau L'Etoile La Chaux Chardonnay Ouille is an organic white wine made by Domaine de Montbourgeau with the Chardonnay variety in the AOC L'Etoile, in Jura (France).
Nicole Deriaux began her viticultural journey alongside her grandfather who acquired Domaine de Montbourgeau in 1920. Since Nicole took over in 1986, she has continued his legacy by modernising the winery. All the vineyards lie close to the estate and are within the L'Etoile denomination, although they also produce wines within other denominations like reds in Côtes du Jura, sparkling wines in Cremant du Jura, and Vin Juane in Arbois.
The Domaine Montbourgeau L'Etoile La Chaux Chardonnay Ouille vineyards are nestled between steep hills surrounded by greenery and woodland. These vines are ecologically cultivated and planted in limestone soils composed of stones and small marine fossils. The yields are limited to 40 to 47 hls/ha and the harvest is carried out manually when the grapes are properly ripe.
In the winery, the Domaine Montbourgeau L'Etoile La Chaux Chardonnay Ouille grapes are pressed in whole bunches using a pneumatic press. The resulting must is settled for 12 hours and then fermented in 30 hl stainless steel tanks. The wine then ages in 6 hl oak barrels for 9-12 months.
Made in a denomination where the soils are characterised by their marine fossils, hence the name AOC Étoile (star in French), Domaine Montbourgeau L'Etoile La Chaux Chardonnay Ouille is a complex white wine with powerful minerality.
