Domaine Leflaive Pouilly-Fuisse is a biodynamic white wine made by Domaine Leflaive in the AOC Pouilly-Fuissé with the Chardonnay variety.
Domaine Leflaive is considered to be one of the best wineries for the production of Burgundy white wines. Although the first signs of the domain date back to 1717, it is currently run by Pierre Vincent, the nephew of Anne-Claude Leflaive, who turned the entire estate into a biodynamic operation with truly remarkable results.
Domaine Leflaive Pouilly-Fuisse comes from old vines planted in an area that was under the shallow Jurassic sea millions of years ago and is made up of fossiliferous loam and loamy limestone. Since 1997, they have worked using biodynamic agriculture with organic preparations and plant infusions. The grapes are harvested by hand.
In the winery, the grape goes through a long and soft pressing using a pneumatic press. The must rests for 24 hours and then ferments spontaneously with native yeasts in stainless steel tanks. Domaine Leflaive Pouilly-Fuisse ages for 12 months in oak barrels and 6 months in small stainless steel tanks.
