Domaine François Mikulski Crémant de Bourgogne is a sparkling wine made by François Mikulski in the AOC Crémant d'Bougogne (Burgundy) with the Chardonnay, Aligote and Pinot Noir varieties.
Known for the great aged wines he produces in the town of Meursault (Burgundy), François Mikulski began working as a winemaker when he inherited a few hectares of vines from his uncle Pierre Boillot. In 1992, alongside his wife, he founded Domaine Mikulski, focussing on the authenticity of the terroir and the quality and freshness of the grape.
Domaine François Mikulski Crémant de Bourgogne comes from a 1.5 hectare area with vines aged between 15 and 35 years old and planted in a subsoil with fine alluvial river sediment. The vines are grown using non-certified organic methods and the harvest is carried out manually in small perforated boxes.
In the winery, the Domaine François Mikulski Crémant de Bourgogne grapes are pressed in a pneumatic press and, after settling naturally for approximately 24 hours, the resulting must is fermented in stainless steel tanks. Then the base wine is mixed, bottled and sealed with crown caps, with an addition of sugar and yeast. These bottles are stored horizontally in the winery where they age on lees for at least 12 months at a regulated temperature of between 12 and 15°C. Finally, they are disgorged and capped with expedition liqueur.
