Didier Dagueneau Pouilly Fumé Silex is a biodynamic white wine made by Domaine Didier Dagueneau with the Sauvignon Blanc variety in the AOC Pouilly Fumé, in the Loire (France).
Didier Dagueneau, one of the best producers in Pouilly-Fumé, took great care to protect the authenticity of his terroirs through biodynamic, organic and minimal intervention practices. He was a wine purist who is known around the world for the quality of his white wines and for being a driving force behind making these terroirs so well thought of.
Didier Dagueneau Pouilly Fumé Silex comes from Sauvignon Blanc vines grown in slate and flint soils. The vines are 35 to 65 years old and are cultivated using biodynamic practices with limited yields. The harvest is carried out manually at the optimum point of ripeness.
When the Didier Dagueneau Pouilly Fumé Silex grapes reach the winery, they are destemmed and gently pressed. The resulting must is fermented in stainless steel tanks with native yeasts. The wine is then aged on lees for 12 months in foudres.
Didier Dagueneau Pouilly Fumé Silex is a cuvée, and the name Sílex is inspired by the type of soil the grapes grow in. An elegant white wine with a mineral character that lives up to the Pouilly Fumé reputation.
