About David & Nadia Elpidios
David & Nadia Elpidios is an ecological, barrel-aged red wine made with the Syrah, Cariñena, Pinotage, Garnacha Tinta and Cinsault red varieties by the David & Nadie winery in the South African denomination of Swartland Wine of Origin (Coastal Region).
Members of the Swartland independent producers, a group committed to organic agriculture and natural winemaking, David & Nadia Wines is run by two winemakers in Western Cape (South Africa) who focus on the cultivation of old and dry vines from different areas and with different types of soils. As a result, they make a range of organic wines with a pure, fresh and natural style.
David & Nadia Elpidios comes from seven different old vineyards. Each of them have rocky soils with particular characteristics and are worked individually using organic and ecological methods. They always seek the natural balance of the terroir and the harvest is carried out at the optimum point of ripeness.
In the winery, only 50% of the David & Nadia Elpidios grapes are destemmed. After selection, all the grapes are placed uncrushed in a stainless steel tank. There, it ferments spontaneously with native yeasts for approximately 4 weeks. Then the grapes are gently pressed and the resulting wine is transferred to old 300-litre, 2,300-litre French oak barrels where it ages for 12 months. Finally it is bottled and rests in the winery for 18 months before being sold.
A product of the new generation of South African winemakers, David & Nadia Elpidios is an organic wine made with the typical Rhone varieties in South Africa. A Swartland discovery in the style of a young Châteauneuf-du-Pape.
