Cavarodes Vin de Pays de Franche-Comté Rouge is a natural cask-aged red wine made by Domaine des Cavarodes with the Pinot Noir, Trousseau, Poulsard, Gamay and Pinot Meunier varieties in the Jura area (France) and ascribed to the classification Vin de Pays de la Franche-Comté.
Etienne Thiebaud is a young winegrower who, after training as an oenologist in Beaune and working at Domaine de la Tournelle, has taken over his family's 5 hectares of vineyards in Cramans. Under the name Domaine des Cavarodes he produces natural wines full of purity, delicacy and minerality.
Cavarodes Vin de Pays de Franche-Comté Rouge comes from very old vineyards, many of them more than 100 years old, whose soils are characterized by Kimmeridge limestone and clay. They’re cultivated organically, using biodynamic treatments and minimum impact.
In the cellar, the grapes of Cavarodes Vin de Pays de Franche-Comté Rouge undergo spontaneous fermentation in fibreglass tanks with a two-week maceration. The wine then ages in foudres for 12 months. Finally, the wine is bottled without clarifying, filtering or additives.
