Ca N' Estruc Xarel·lo 2023 boasts an appealing straw-yellow hue with greenish reflections. Xarel·lo is the undisputed queen of the vineyards in northwestern Spain. And if there's one wine that must be present at Ca N’Estruc, it's Ca N’Estruc Xarel·lo. How could this variety be absent from one of the oldest wineries in Catalonia? How could this family-run business forgo it?
Since the 16th century (specifically since 1547), Ca N’Estruc has been in operation. Initially for general agricultural purposes, later for livestock use, but always with xarel·lo present. From its inception, this variety has always been present in the vineyards, becoming today a key element in the production of Ca N’Estruc Xarel·lo. Generally, it is a young, single-varietal wine, made with grapes from the estate itself and other neighbouring vineyards. These vines, which do not belong to the property, are thoroughly monitored by the winery’s management, as it is essential that they all meet the biodynamic requirements demanded at Ca N’Estruc. Since 2019, the latest generation of the winery—embodied in Francisco Martí and his daughter Anna—has strongly committed to this type of cultivation, where the ecosystem is respected to the utmost, and work is always carried out in an artisanal and traditional manner. Only in this way can the purest expression of xarel·lo be achieved.
In this case, due to the great variety of soils present in the 22 hectares of Ca N’Estruc, this variety will acquire different nuances and profiles, making the blend of alluvial, clayey, calcareous, and gravelly soils found in the area extremely valuable. The vines, aged between 30 and 50 years, are situated at 165 metres above sea level and are harvested manually around September. With this work, one of the most crucial, the green light is given to the production process of Ca N’Estruc Xarel·lo, which will continue with subsequent selection, destemming, and pressing. This latter step must be very gentle, without exerting much pressure, to obtain the highest quality must possible. The subsequent settling will also be crucial. This operation involves letting the must rest in cold conditions for about 24 hours to allow all the suspended lees to settle at the bottom of the tank, leaving the must clear before fermentation. After transferring to stainless steel tanks, the time comes to prepare the starter culture (from indigenous yeasts) and add it to the tank to initiate the fermentation of Ca N’Estruc Xarel·lo.
After a couple of weeks, Ca N’Estruc Xarel·lo will have completed fermentation and be ready for bottling. Within the glass lies a symphony of aromas and flavours that will reveal to you the purest expression of xarel·lo. Dare to try it and hesitate no more!
