Boekenhoutskloof Cabernet Sauvignon Franschhoek is a single-variety Cabernet Sauvignon red wine produced by the Boekenhoutskloof winery in the Franschhoek denomination in South Africa.
Boekenhoutskloof Cabernet Sauvignon Franschhoek is made from grapes sourced from four adjacent plots in the southwestern part of the Franschhoek Valley, which has predominantly sandy soils and loam over a granite bedrock.
The clusters are gently vinified to produce a more subtle wine. The harvest is carried out manually with a selective classification of the grapes, which are then taken to the winery in small boxes. When they reach the winery, the bunches are destemmed and cold macerated in a traditional concrete container. Fermentation takes place spontaneously under controlled temperatures ranging from 27ºC to 30ºC and with frequent pump-overs.
The resulting wine undergoes a prolonged malolactic fermentation and is aged in oak barrels from the Sylvain and Saury cooperages.
Boekenhoutskloof Cabernet Sauvignon Franschhoek is an exceptionally full-bodied and round concentrated wine.
