Bimbache Tinto is a red wine made by Bimbache Vinícola with the Listán Negro variety in the D.O. Hierro (Canary Islands).
Bimbache Vinícola is an innovative project led by young Rayco Fernández and Pablo Matallana with the aim of promoting unique native varieties and the great diversity of the local terroirs. An exciting and unique work that has earned one of the highest scores that an El Hierro winery has ever achieved from the prestigious Wine Advocate.
Bimbache Tinto comes from different vineyards located in the south of the island of Hierro, in the Canary Islands. These vines are planted on clay-rich soils at about 800 metres above sea level. They are cultivated using environmentally friendly agriculture and the harvest is carried out manually at the optimum point of ripeness.
In the winery, the Bimbache Tinto grapes are gently pressed and then they macerate and ferment spontaneously with native yeasts in stainless steel tanks. Finally, the wine rests in these steel tanks until it is ready to bottle.
Bimbache Tinto is made by facing climatic and human challenges. A volcanic red wine with a low alcohol content (11%) and high minerality.
