Ausonia Abruzzo Pecorino Machaon is a biodynamic white wine made on lees by the Ausonia winery in the D.O. Abruzzo, in the Italian region of Abruzzo.
Founded in 2008 by Simone and his wife Francesca, Ausonia is a dream come true of wanting to capture a specific identity. A beautiful project in Los Abruzos that produces organic, biodynamic and high-quality wines with a true local essence.
Ausonia Abruzzo Pecorino Machaon is made from Pecorino Machaon, a native variety that grows in the hills of Abruzzo’s Atri region. These vines are planted in clayey and calcareous soils and are cultivated using organic agriculture with biodynamic treatments. The harvest is carried out manually at the optimum point of ripeness.
Ausonia Abruzzo Pecorino Machaon begins vinification with a spontaneous fermentation with native yeasts in stainless steel tanks. It is then bottled without clarifying or filtering, and it spends at least 6 months in the bottle before being sold.
Made with one of the most expressive white grapes in Italy, Ausonia Abruzzo Pecorino Machaon is a wine with a great mineral flavour and a very marked persistence. Two characteristics that undoubtedly make this a great wine for aging.
