André Beaufort Polisy Brut Reserve is a biodynamic sparkling wine made by André Beaufort in the AOC Champagne with Chardonnay and Pinot Noir varieties.
Under the name of André Beaufort in Ambonnay, you’ll find one of the leading maisons in organic farming. It all began in 1971 when its founder detected his allergy to synthetic products and switched radically to biodynamic products. Today his son continues with the same environmentally-friendly philosophy and ages his champagnes in old barrels. As a result, he obtains very fruity champagnes full of minerality.
André Beaufort Polisy Brut Reserve is obtained from vineyards located in Polisy (Aube), in the Champagne region. These vines are planted in clayey soils which haven’t received any systematic treatment and using compost and manure. He experiments with homeopathy and aromatherapy to combat possible fungal diseases and once the grapes have reached their optimum ripeness, they are harvested by hand.
The André Beaufort Polisy Brut Reserve grapes are immediately pressed and the must is decanted for 12 hours. Spontaneous fermentation with native yeasts takes place in steel tanks and wooden casks. To avoid excessive use of SO2, malolactic fermentation is left to activate spontaneously in their base wines. Afterwards, fermentation begins in the bottle according to the champenoise method, where it remains for 24 months. Finally the champagne is disgorged by hand "a la volée" and the dosage is added.
Based on the most natural expression of an authentic champagne, André Beaufort Polisy Brut Reserve is a fruity, intense, velvety sparkling wine. A delicious new generation sulphite-free champagne.
