André Beaufort was one of the first wineries to embrace organic and biodynamic principles in the champagne region. It all started when owner Jacques suffered a serious illness in 1960 caused by contact with pesticides and herbicides, and since then he has been using organic agriculture, biodynamic principles and minimal intervention. This way of doing things leaves the whims of Mother Nature on display for all to see, and Beaufort achieves great results through these methods.
The André Beaufort Polisy Brut Millesime grapes are cultivated according to ecological principles In the town of Ambonnay, in Montagne de Reims, one of the best places to grow the Pinot Noir variety. Biodynamic products are applied following the lunar calendar and the harvest is carried out manually at the optimum point of ripeness.
Beaufort is equally non-interventionist in the winery. Following a first spontaneous fermentation with native yeasts, Beaufort Polisy Brut Millesime undergoes a second fermentation in the bottle and remains on its lees and stacked for long periods of time before being manually disgorged and adding the dosage.
