Aire de Protos is a monovarietalTinta del País, Tempranillo rosé wine, from the D.O. Cigales produced by Protos.
Protos was the first winery to be set up in Ribera del Duero. It even went so far as to register the name Ribera del Duero, although it later ceded it to the appellation of origin. Since its inception the winery has been producing quality wines. Examples of how this has been pursued include the fact that it has limited yields to achieve a very balanced grape, or has controlled and planned the harvest of each plot according to their particular characteristics.
The Tempranillo vineyards for Aire de Protos are less than 25 years old. The harvest is carried out manually into 20 kg boxes about 10 days before the rest in order to make the most of the aromas in the skin and to ensure that the levels of anthocyanins, the polyphenols responsible for the red colour, are lower.
Aire de Protos is initially fermented in concrete tanks at 15ºC, and ends up in stainless tanks. The yeasts used have been isolated and selected from the winery's vineyards. At the end of the fermentation the wine is aged on fine lees for a few weeks to achieve greater volume in the mouth.
Aire de Protos has been produced since 2016. It stands out for its pale pink color and its aroma of red fruit and peach, and its floral touches.

La Ribera del Duero tells us a story about an ancestral tradition that goes back to the 9th century, and which was already used my the monks of the Order of the Cistercians. A story about farms and terroirs, a large winemaking kingdom that has its roots back in the Middle Age, and whose imprint it hidden in the essence of its villages, its villas and its castle, Castillo de Peñafiel, on the of the most important fortresses of the region. Still preserved in the inside of the castle is the ageing winery of Protos, the first winery in the area, alongside Vega Sicilia, that sold bottled Ribera del Duero wines.
