Vinomi

Vinomi is an organic white wine from the D.O. Penedés made by Can Descregut. They respect the biodiversity and the environment and so don't treat the vines with any herbicides or pesticides.
This wine is a blend of Xarel.lo and Xarel.lo Rojo from the winery's vineyards. The Xarel.lo Rojo is a very rare variety in danger of extinction, found in the Penedés. The Xarel.lo Rojo comes from vines over 40 years old with limited production.

The wine is subject to a cold pellicular maceration to extract the aromas from the skins, especially the Xarel.lo Rojo. The free-run juice then goes through a static debourage and reaches the alcoholic fermentation in stainless steel deposits.
