That indomitable spirit, which knows how to enjoy the moment without seeking permission or validation from anyone, inspires those who champion authenticity over empty rhetoric. Golfo was created precisely for this, to champion the individual capacity to choose with one's own judgment and to question established norms only when they cease to add value. In a world running on autopilot, this aperitif is a conscious celebration of pause, spontaneous conversation, and that lingering after-meal time because no one feels like watching the clock.

From the town of Quintana del Pidio, nestled in the heart of the Ribera del Duero (Castilla y León), arises this unique project conceived by the oenologist Ciriaco Giacosa alongside the winery Cillar de Silos. The vineyard is situated on elevated plots where the vines coexist with a Mediterranean climate of a distinctly continental nature, characterized by very cold winters and dry summers with a significant temperature fluctuation between day and night. The area's clay-limestone soil provides an ideal structure for the tinta del país vines, the local name for tempranillo in this region. For the production of this vermouth, overripe grapes are selected, intentionally seeking a higher concentration of natural sugars and aromatic maturity. The cultivation philosophy is based on absolute respect for the surrounding biodiversity, resorting to manual harvesting to ensure the integrity of each cluster.

The production of Vermut Golfo follows a meticulously crafted and artisanal sequence to build its ideal profile. After manual harvesting, the overripe grapes are destemmed and undergo maceration, the process of contact between the must and the grape skins, to extract the mahogany colour and fruit structure. Once alcoholic fermentation is complete, the biological process where yeasts transform sugar into alcohol, the tempranillo base wine is obtained, a highly unusual choice that breaks with the traditional use of white varieties. To this red wine, a carefully selected array of botanicals and aromatic herbs is added through a secret infusion process, where the herbal elements are blended with the alcoholic base. After the necessary rackings, the movements of the liquid to cleanse it of impurities, the vermouth undergoes a period of ageing and resting before being finally bottled.

Thus, Golfo presents itself as a sincere, authentic vermouth with an overwhelming personality. Any excuse is perfect to serve a glass, prolong the good times, and enjoy the freedom of a leisurely sip.
