The geographical feature known as doline is a series of large and impressive holes that can appear in the argilo-calcareous soils due to the erosive activity of water. A very unique characteristic of the Garraf massif (Catalonia) that the winemaker Raimon Badell has wanted to highlight in his Vall Dolina wine project.
This winery, in the small town of Olesa de Bonesvalls (Penedès), makes VallDolina Reserva Eco cava. A traditional style sparkling wine produced with the three typical varieties of the D.O. Cava, Xarel·lo, Macabeo and Parellada with a touch of Chardonnay. Organic agriculture is used at all times, without chemical products, and vinification is carried out with a first fermentation in stainless steel tanks at 16°C and a second fermentation in the bottle at 13°C. Finally, it is aged on the lees for 24 months and no sugar is added at disgorgement.
With a limited production and a close monitoring in each of the processes, VallDolina Reserva Eco is a cava that oozes Garraf typicity. A true artisan discovery from the Penedès.
