Valdespino is one of the oldest wineries in Jerez. The first member of the Valdespino family who started to cultivate the vines and age the Sherry wines was Mr Alfonso Valdespino, in the 13th century. Currently, Valdespino belongs to Grupo Estévez.
Valdespino is a reference of the ageing of Sherry wines, known for their traditional methods in the production processes of their wines.
All the grapes used to produce the Valdespino cru wines come from the farm Macharnudo Alto, located around 5 km from the north-east of Jerez, at 135 metres above sea level, planted on "albariza" soils, which are typical of the area. The "albariza" are white calcareous soils that retain the water very well.
Valdespino Fino Inocente is a wine made from Palomino Fino from the renown farm Pago Macharnudo Alto, with vines that are over 25 years old.
The free-run must (mosto yema) ferments in 500-litre American oak butts. Then, it is aged under the cap of yeast (velo en flor), going through 10 "criaderas", something quite unusual for a Fino wine, as they normally go through 3 or 4 "criaderas". The minimum ageing is 8 years.
