Valdespino is one of the oldest wineries in Jerez. The first member of the Valdespino family who started to cultivate the vines and age the Sherry wines was Mr Alfonso Valdespino, in the 13th century. Currently, Valdespino belongs to Grupo Estévez.
Valdespino is a reference of the ageing of Sherry wines, known for their traditional methods in the production processes of their wines.
All the grapes used to produce the Valdespino cru wines come from the farm Macharnudo Alto, located around 5 km from the north-east of Jerez, at 135 metres above sea level, planted on "albariza" soils, which are typical of the area. The "albariza" are white calcareous soils that retain the water very well.
Valdespino Deliciosa Manzanilla en Rama is a wine made from Palomino Fino from the farm Pago de Miraflores in Sanlúcar de Barrameda, facing the Atlantic winds.
Once the grapes are harvested, they ferment in stainless steel deposits. They go through a biological ageing under the cap of yeast "velo de flor" for more than 5 years. There are 6 "criaderas" plus the Misericordia "solera", the most famous one of Manzanilla. The wine is directly bottled from the butts, without filtering.
