Springfield Life From Stone Sauvignon Blanc is a white wine aged on lees produced by the Springfield Estate family winery in the Western Cape South Coast denomination (South Africa) with the Sauvignon Blanc variety.
Springfield Estate is a family winery with a long history. It is run by descendants of the French who left the Loire in 1688 to settle in the Robertson Valley, attracted by the winemaking qualities of the area right from the beginning. Their knowledge and skills have been passed down generation to generation and it is now the Buwer brothers who carry the legacy, making wines under the motto of “wines made with honor”.
Springfield Life From Stone Sauvignon Blanc comes from vines with an average age of 20 years old. Strains planted on rocky soils with a high percentage of quartz and facing north to south to guarantee a more even maturation. Traditional agriculture is practiced and the harvest takes place at night to keep the berry fresh.
When the Springfield Life From Stone Sauvignon Blanc grape reaches the winery, alcoholic fermentation begins with native yeasts for 21 days and stabilised at low temperatures (-3oC) over 2-3 weeks. It is then allowed to age on its own lees for 3 months. Finally, it is bottled with low sulphur and minimal filtration.
Springfield Life From Stone Sauvignon Blanc is a white wine that, as its name implies, starts life among the stones. An extremely rocky soil that hinders plant growth and therefore produces a berry of spectacular concentration and minerality.

Springfield Life From Stone Sauvignon Blanc 2017 is a creamy white wine with intense aromas of red fruit, passion fruit, mineral notes and spicy black pepper touches. On the palate it is fresh, flavoursome, fruity and very mineral. It has a very fresh and persistent finish.
