The word castle comes from the Latin, castellum, which means strong place, enclosed by walls, bastions, moats and other fortifications. And although this concept is understood as a construction mainly for military use, the truth is that many of these French castles from the Middle Ages have been rebuilt over the centuries to become another type of building that is just as emblematic, like the “chateau” or “Domaine”. When it comes to Le Domaine Roger Sabo, local documents say the castle dates back to 1560, but it was when it fell into the hands of Roger Sabon that it became a quality winery. With two well-distinguished properties on both sides of the Rhone River, Le Domaine de Châteauneuf-du-Pape with 17 hectares and Chapelle de Maillac with 28 hectares on the right side, their collection of wines from different terroirs allows them to offer a wide range of products with varied and, above all, distinguished characteristics.
One example of their work is Roger Sabon Châteauneuf-du-Pape Les Olivets, a red wine that comes from “Les Olivets”, vineyards within the AOC Châteauneuf-du-Pape composed mainly of sandy limestone and rocky limestone soils and lying 50 metres above sea level. This wine is a blend of Grenache, Cinsault and Syrah from 50 year old vines cultivated using sustainable agriculture and harvesting the grapes by hand at the optimum point of ripeness. In the winery, the grapes are selected and destemmed, then fermented in stainless steel tanks with a 30-day maceration and daily délestage. The wine is then aged for 18 months in 600, 2,500 and 4,000 litre French oak barrels.
