Roger Goulart Coral Rosé is a cava made by Caves Roger Goulart in the municipality of Sant Esteve Sesrovires (Barcelona), D.O. Cava.
Caves Roger Goulart is a winery specializing in the production of long-aged cavas, whose origin goes back to 1882. In this year, Magí Canals i Farréexcavated Cava Sant Jordi in the garden of his house, where he would later begin to produce cava using the traditional champagne method.
Caves Roger Goulart prepares its cavas with delicacy and thoroughness; selecting the best grapes strictly from the best production areas, with the optimum levels of acidity in order obtain very fresh base wines. These wines, preserved in the best conditions, will be fundamental for carrying out the second fermentation and its subsequent aging.
Roger Goulart Brut Rosé is a cava made with Grenache and Pinot Noir grapes from vineyards located in the Penedés area.
Each variety is made separately. Before pressing, the grapes undergo a skin-contact maceration at a low temperature. The pressing is gentle, obtaining only a 50% yield. After racking, the must ferments at a controlled temperature of 16-18°C, with selected yeasts. After the fermentation the coupages are carried out in order to perform the tirages. After the second fermentation and a minimum aging of 9 months, when the disgorging is performed, the expedition liqueur is added, leaving the sugar level at approximately 8 grams/liter.
