About Raimonda

Torelló is a renowned establishment, celebrated as one of the principal architects behind Corpinnat, the collective brand established to champion the superior quality sparkling wines crafted in the heart of the Penedès. However, to focus solely on this achievement would be to overlook the vast versatility of its heritage. At the Can Martí estate, the family's presence dates back to 1395, embodying centuries of harmony with the land and a profound understanding of each parcel. With over 80 hectares of their own vineyards at their disposal, the winery demonstrates that their expertise is not confined to sparkling wines but extends with equal rigour to the production of refined still wines.

From Gelida, in the Alt Penedès, Raimonda stands as irrefutable evidence of this ambition. Entirely crafted at the Can Martí estate, the merlot and cabernet sauvignon vines thrive on clay-limestone soils, a perfect amalgamation where the clay retains the necessary moisture and the limestone imparts freshness and mineral structure. True to their philosophy of respecting biodiversity, the entire vineyard is cultivated under organic certification, eschewing the use of pesticides and synthetic fertilisers.

The production of Raimonda is meticulously attended to with absolute procedural precision. The harvest is conducted manually in small 25-kilogram crates. Once at the winery, the grapes undergo fermentation in stainless steel tanks, a biological process in which yeast transforms the sugars in the must into alcohol, with three daily pump-overs, a technique involving the extraction of the must from the bottom of the tank and pouring it back over the top to moisten the grape skins, extracting colour and tannins. Only the free-run wine, the highest quality must that flows naturally without pressing the grapes, is used for this wine. Subsequently, malolactic fermentation, the biological transformation that softens acidity by converting malic acid into lactic acid, occurs in concrete tanks. Finally, the wine is aged for 12 months in new French oak barrels to refine its structure before bottling.
