About Philipponnat Royale Reserve Brut
For decades, Champagne guarded its recipes as if they were state secrets, enveloping each bottle in an aura of mystery. However, the Philipponnat family chose to break with this secrecy, opting for complete transparency. They were the first house in the region to detail the exact blend, base wine, dosage, and precise disgorgement date on the back label, providing enthusiasts and experts with the genuine keys to their creation. Based in Mareuil-sur-Aÿ since the 16th century, the Philipponnat family views prestige as a natural consequence of transparency and technical precision. Royale Réserve Brut pays homage to this historic family tradition, which once directly supplied the court of Louis XIV, demonstrating that true sophistication requires no artifice, only the authenticity of an unparalleled terroir.
From Mareuil-sur-Aÿ, in the very heart of the Grande Vallée de la Marne within the AOC Champagne, Philipponnat Royale Reserve Brut is born from a mosaic of vineyards classified as Premier and Grand Cru. The wine's structure is predominantly supported by the pinot noir variety, accompanied by chardonnay and a hint of meunier. The vines delve their roots into purely calcareous soils, characterised by the renowned chalk of Champagne, which acts as a flawless thermal and water regulator, absorbing water to release it back to the plant during drought periods. The climate is continental with an Atlantic influence, marked by cool temperatures, moderate rainfall, and restrained sunshine that preserves a vibrant acidity in the grapes. The cultivation philosophy combines traditional viticulture with a profound attention to the surrounding biodiversity, conducting meticulous manual harvesting to select the clusters at their optimal ripeness.
The production of Philipponnat Royale Réserve Brut adheres to traditional methods aimed at protecting the grapes and preventing premature oxidation. Following manual harvesting and gentle pressing, the must undergoes the initial alcoholic fermentation in stainless steel tanks at controlled temperatures. Subsequently, the wine undergoes a partial malolactic fermentation, softening the acids while maintaining the right tension. The assemblage incorporates between 25% and 35% of reserve wines aged in wooden barrels to develop more complex aromas. After bottling, the champagne undergoes a second fermentation in the bottle and is aged on the lees for 3 years in the winery's underground cellars at a constant temperature of 12°C. Finally, after disgorgement, a moderate dosage of 8 grams per litre is added to balance the acidity without diminishing freshness.
