Peña Caballera is a red wine from the Vinos de Madrid region produced by the Marañones winery. This wine is made using only Grenache grapes.
Peña Caballera is a single-vineyard wine, which means that all the grapes are taken from a single plot. The plot used spans 1.5 hectares, home to vines that are between 50 and 70 years old. The vines grown on granite soils with sandy loam textures that are no more than half a meter deep. The vineyard is also located on a north-facing slope at an altitude of 850 meters.
Cultivation of the vinyards is carried out organically and the grapes, after being transported to the winery, are vinified whole. Firstly, the grapes undergo a phase of pre-ferment maceration using native yeasts. Following this, fermentation takes place in open oak vats of 33 hectolitres of capacity. During this phase various pumpings occur in order to encourage efficient extraction of colour and flavour components
Finally, Peña Caballera is aged for 12 months in used 500litre French oak barrels. The wine is then bottled without being clarified or filtered. Production is limited to 2,500 units.
Marañones is a winery located near the city of Madrid led by Fernando Garcia Alonso, an agronomist and oenologist, and Fernando Cornejo, a lawyer and owner of the vineyards. The company produces some of the best wines in the Vinos de Madrid region.
