Pago de los Capellanes Roble is a red wine from the appellation of origin Ribera del Duero produced by Pago de los Capellanes. This wine is a varietal Tempranillo.
After the harvest, the grapes for Pago de los Capellanes Roble are transported to the winery, where firstly, a brief cold pre-fermentation process. Secondly, a spontaneous alcoholic fermentation.
Pago de los Capellanes Roble remains in a vat for 22 days. During this time, various battonages and pump overs are conducted to control the density, temperature and evolution of the yeast.
After this process, the containers are bled and thus, begins the malolactic fermentation at 20ºC that extends for a further 24 days.
Pago de los Capellanes Roble rests for 5 months in new French oak barrels being released on the market.
Since this adventure began, the married couple Rodero-Villa, surrounded by an exceptional team and advocating for a very particular way of conceiving wine, has now managed to fulfil their dream that goes back to 1980. The dream of making Pago de los Capellanes achieve quality recognition national and internationally, with modern profile wines, with Atlantic, elegant and tasty hints, produced with enough expertise, so they always carry their Castilian origins with them.
