The best grapes of the vintage. The most personal selection of Manuel Raventós Negra. Manuel Raventós, a sparkling wine of exceptional character produced in Catalonia, can be presented in this simple way.
The place where Manuel Raventós starts life is located in the basin of the river Anoia, a tributary of the Llobregat, a very special and unique enclave with the perfect conditions for grapes to grow wonderfully, with ideal salinity and acidity to produce sparkling wines. This area in northeast Catalonia, between the Catalan Pre-Coastal and Coastal mountain ranges, has a unique personality due to its calcareous soils (the result of fossil and marine remains deposited over the years) and its climate (with mild winters and hot, dry summers). The proximity of the sea (which moderates temperatures), the coastal mountain range (which protects from excess humidity) and the Compte and Montserrat mountain ranges (which protect it from the cold of the Pyrenees), create an ideal microclimate that encourages slow ripening. The 90 hectares have been completely converted to biodynamic principles (animal manure, short bush-form pruning, treatment of the vines with copper and sulphur infusions, etc.).
The only way to harvest Manuel Raventós is by hand with small trailers (to guarantee the good condition of the grapes). After the Manuel Raventós grapes have been selected in the vineyard itself, they are taken to the winery, where they are gently pressed and the musts are separated by the plots they come from. Manuel Raventós ferments in stainless steel tanks with native yeasts. The wine is then aged for 9 months on lees and then in racks for 6 years. This process gives Manuel Raventós the final silky and enveloping texture.
Aromatic complexity. Outstanding aromas of ripe white fruit and tropical fruit, highlighting the lime and orange peel. Roasted nuts creamy touches that gives it the long aging.
