About Le Domaine D’Edouard Bourgogne Cotes D’Auxerre Pinot Noir
There are moments in life when one must be willing to change direction, leave behind the comfort of security, and stake everything on a passion. Édouard Lepesme was employed until 2010 in the bulk wine trade, surrounded by numbers and large volumes, yet he felt his true place was amidst the vineyards, treading the soil. In 2011, he made the bold decision to radically alter his career path and moved to Beaune to pursue studies in viticulture and oenology, one of the most comprehensive programmes globally for understanding the language of the vines. With his diploma in hand, he was not content with mere theory and sought to learn from the most esteemed figures in the region, working closely alongside revered producers in Chablis and the Côte de Nuits, before venturing across the globe to harvest in New Zealand. All this accumulated experience came to fruition in 2014, when the opportunity arose to take charge of a historic estate that was up for sale, a unique chance that transformed his dream into a tangible reality.
From the north of Burgundy, in the serene village of Vaux, the winery Le Domaine D’Edouard has established a project grounded in simplicity and absolute respect for the environment. Le Domaine D’Edouard Bourgogne Cotes D’Auxerre Pinot Noir originates specifically from the denomination Bourgogne Côtes d’Auxerre, a region of great vinicultural nobility where the Romans cultivated vines centuries ago. When Édouard assumed control of the property, he encountered a genuine stroke of luck: 13.5 hectares of vineyards already cultivated under organic farming principles for 15 years. The soil is composed of limestone and marl, a very poor calcareous terrain that imparts enviable finesse and tension to the vines. Under a continental climate with short, cool summers, the pinot noir variety finds the ideal space to mature slowly, maintaining a vibrant acidity. The cultivation philosophy is entirely respectful of biodiversity, employing meticulous manual harvesting to collect the grapes at their optimal moment of freshness.
Vinification at the winery is conducted in the simplest and most natural manner possible, intervening only when strictly necessary to preserve the fruit's purity. The selected grapes arrive at the facilities, are gently destemmed to separate the berries from the stalk, the woody structure of the cluster, and are placed into the vats. The fruit is allowed to macerate cold for a few days with their skins to delicately extract colour and primary aromas. Subsequently, alcoholic fermentation begins with indigenous yeasts, those native to the vineyard, controlling the temperature so that the process is slow and respectful. Once completed, the wine undergoes malolactic fermentation, the technical transformation that softens the wine's natural acidity, and is aged in used French oak barrels for several months to gain stability and volume without the wood overshadowing the terroir's character. Finally, the red is bottled after a light clarification.
