About Kistler Les Noisetiers Chardonnay
Many regard it as the most enigmatic appellation of Sonoma County, northwest of California. Could it be due to the fierce winds that lash its vineyards? Is it the fact that this area receives twice the rainfall compared to neighboring counties? Or perhaps it's the perpetual influence of the Pacific? What is undeniable, however, is that between the San Pablo Bay and Mendocino County, there are some 2,000 hectares of vineyards, a terrain dominated by Pinot Noir and Chardonnay, where legendary wines are born; their creators are held in equally high regard, such as Kistler and its white Kistler Les Noisetiers Chardonnay.
As its name suggests, Kistler Les Noisetiers Chardonnay is a single-varietal Chardonnay, fermented and aged in barrels on its lees. This white also undergoes malolactic fermentation. It is truly a spectacle not to be missed.
Capturing the essence of the terroir in each bottle is the ultimate goal pursued by father and daughter at this winery. Steve Kistler and Catherin Kistler work with a clone imported from Burgundy in the early 20th century, which today thrives in the vineyards located on the parcels of Vine Hill, Trenton Roadhouse, Dutto Ranch, and Laguna Ridge (all on Goldridge soils with a sandy-loam and clay mixture), where they aim for lower yields with very small berries, which can produce highly concentrated wines, capable of withstanding barrel aging. And all this is achieved in Kistler Les Noisetiers Chardonnay.
Kistler Les Noisetiers Chardonnay is harvested by hand, at night, at the coolest time to ensure the grapes arrive at the winery as fresh as possible. Upon arrival, the clusters are gently pressed, without exerting strong pressure, always in pursuit of quality. Generally, at Kistler, only this free-run juice is used (they don't even have a press). After this, Kistler Les Noisetiers Chardonnay is directly transferred to barrels, where it will ferment and undergo malolactic fermentation. Indigenous yeasts will work first, followed by lactic acid bacteria. And at no point will it be touched or moved. Everything will start on its own. After both processes are complete, Kistler Les Noisetiers Chardonnay will age for 10 months on its lees, in these same oak barrels (30% of which are new). Finally, it will be bottled unfiltered and unfined.
