About Kamara Retsina

Retsina is a traditional Greek wine made with small pieces of resin that impart a distinctive flavour. This unique character, unparalleled worldwide, has been crafted over the years, with archaeological remains even showing that this wine was produced in antiquity. Whether due to the proximity of pine forests in central Greece or because it was used as a natural preservative to seal amphorae, resin has always played a significant role in this wine, which can still be tasted in any Greek bar today. Now, the Kioutsoukis family, owners of the eponymous winery, presents their personal version with Kamara Retsina, a white wine that ferments with small pieces of resin.

Despite its youth, this winery, located in northern Greece (30 km from Thessaloniki), has embraced this tradition, producing this wine from the roditis and assyrtiko varieties. Both are indigenous to Greece and grow on the slopes of Mygdonia on clay and silt loam soils. In this location, the Kioutsoukis family owns about 11 hectares, which they cultivate biodynamically, allowing nature to be the true guide of this story. It is worth noting that from the outset, Kioutsoukis has strived to maintain a fully naturalistic philosophy of minimal intervention, where chemicals and artificial elements have no place (obviously).

Kamara Retsina is hand-harvested and destemmed. From there, it goes directly to stainless steel tanks where small pieces of resin are added during fermentation. Once the process is complete, Kamara Retsina ages for two months on fine lees and is bottled without filtering or clarification. Only at this point is a small amount of sulfites added to prevent the wine from deviating and spoiling during the time it is not consumed.

Kamara Retsina is one of the most renowned Greek wines. With it, Kioutsoukis not only aims to honour a long-standing tradition but also to pay tribute to a fundamental aspect of Thessaloniki, the meeting point capable of bringing its inhabitants together.

Olfactorily, it is exceedingly complex and distinctive, with pronounced pine notes intermingling with citrus fruits, mint, and jasmine. On the palate, it is refreshingly crisp and exquisitely refined, with the resin character prominently featured. During this tasting stage, flavors of orange and grapefruit emerge. The finish is flavorsome and protracted.
