About Freixenet Malvasia
Freixenet Malvasia is a cava produced by Freixenet in Sant Sadurní d’Anoia, D.O. Cava.
Freixenet is one of the most popular cava brands. Its history goes back to 1861, when the Sala family started to produce still wines. However, it was not until 1911, when the heiress of Casa Sala married the youngest of the Ferrer de la Freixeda family, that they started to make sparkling wines using the traditional method, like the one used for Champagne. In 1914, the first bottle of sparkling wine is launched on the market, under the brand Freixenet.
Currently, Freixenet is a winemaking group with more than 20 brands around Spain, France, United States, Mexico, Argentina, Chile and Australia. They have a production of more than 114 million bottles per year, and they export to more than 150 countries.
Freixenet Malvasia is a cava made from Malvoisie from vineyards in the area of La Bisbal del Penedès, located at the foot of the mountain on poor and stony soils.
The grapes are manually harvested and placed in 25-kg boxes. Once they arrive at the winery, the go through a pneumatic press, where they obtain the flor must without pressurising. This must is left to stand for 24 hours. Once it is cleaned, it is transferred to stainless steel deposits at a controlled temperature, 14-16ºC, where it goes through the first fermentation for 10-12 days. After the fermentation ends, the wine rests for a few months in stainless steel deposits. After a series of rackings, the cava will be transferred to bottles, where it will go through the second fermentation. After disgorgement, they add 52 gr of sugar per litre of cava. The ageing varies every year, depending on the quality of the harvest, but it is never less than 15 months.
Freixenet Malvasia is a fruity, structured and sweet cava. The aromas of very ripe white fruit of the variety are marked by the sugar of the dosage, making this an ideal cava to drink with desserts.
