Frank Cornelissen Munjebel Bianco is a natural white wine made with the Grecanico and Carricante varieties by Frank Cornelissen in Terre Siciliane (Italy).
The winery is located in the northeast of Sicily, in the Etna volcano valley. A magical place with all the necessary ingredients to win over one of the most prestigious natural winemakers, Frank Cornelissen. A producer from a young age, this Belgian winemaker is known for following the instructions of Mother Nature. That means he works on demand, taking into account the needs of the vines at all times. So he pays no attention to normal calendars and uses traditional methods in both the vineyard and the winery.
Frank Cornelissen Munjebel Bianco comes from 40-year-old vines rooted in lava soils at an altitude of between 750 and 1,000 metres above sea level. They use organic farming methods as well as biodynamic practices when needed. The grapes are harvested manually when they reach optimum ripeness.
Once the grapes reach the winery, they are destemmed and lightly macerated. Then the Frank Cornelissen Munjebel Bianco must ferments with native yeasts and macerates with its own skins in fibreglass tanks for 4 days. It then ages in 2500 to 5000-litre epoxy resin tanks. Once the wine is ready to be sold, it is bottled without clarifying.
