Fino Capataz exhibits an appealing golden hue, clean and bright. On the nose, it features prominent notes of flor yeast and almond, with a notable aromatic intensity accompanied by slight oxidative nuances and subtle spicy and saline hints. On the palate, it is full-bodied and flavourful, with a pleasant slightly bitter touch and evocations of dried fruits. Its finish is long and elegant, with great persistence that lingers on the aftertaste.

About Fino Capataz
There is a moment in the silence of the cellar where time stands still. A man walks among rows of oak casks, hears the creaking of the wood, and, merely by bringing the venencia close to the glass, knows precisely what is happening inside each vessel. He is the capataz, the keeper of the keys, the ultimate practical authority whose knowledge does not come from books, but from a lifetime of breathing in the aroma of the cellar. This wine is born as a direct tribute to that indispensable figure, the silent leader who guides every step of the ageing process with respect and devotion.
From Montilla, in the heart of the province of Córdoba, the historic bodega Alvear crafts this wine under the auspices of the DO Montilla-Moriles. The grapes hail from old vineyards planted between 1920 and 1980 in the Sierra de Montilla, a region of superior quality where the vines sink their roots into albariza soils, those dazzlingly white limestone lands that act as natural sponges, retaining rainwater to withstand the inland Mediterranean climate, characterized by dry summers and intense sunlight. Here, the undisputed protagonist is the Pedro Ximénez variety, cultivated under a traditional and respectful philosophy, where manual harvesting ensures that each cluster reaches the press intact.
In the bodega, the technical process is meticulous. Following manual harvesting, the grapes are gently pressed and the must ferments naturally. Thanks to the sugar richness of Pedro Ximénez under the Cordoban sun, the wine naturally reaches 15 degrees of alcohol, allowing it to proceed to the phase of biological ageing without the need for fortification, that is, without adding vinous alcohol. It is then that the wine enters the traditional system of criaderas and soleras, where it rests under the veil of flor, a layer of live yeasts that isolates the wine from oxygen and transforms it over 12 years. Finally, after passing through expert hands that determine the optimal moment for bottling, the wine is bottled retaining all its authenticity.
