Characteristics El Níspero
El Níspero is a white wine from La Palma produced by the El Níspero winery. It is a varietal Albillo Blanco.
Harvesting is done manually and collected in boxes of between 12 and 14 kilos. Once in the winery, the grapes are selected and subjected to a gentle stripping.
El Níspero undergoes a cold maceration for 24 hours and a subsequent fermentation at a controlled temperature of 16º, with indigenous yeasts.
El Níspero finally rests for about three months before being filtered and clarified. El Níspero was founded at the end of the century by Euphrosyne Pérez Rodríguez, who inherited the family passion for wine.
The winery has the latest technology but does not lose sight of traditional winemaking methods.
