He is considered the disciple of Didier Dagueneau, master of the Pouilly Fumé cult wines. However, Jonathan Pabiot has an identity of his own. He is the fifth generation to run the family domaine in the small village of Les Loges, in the Loire Valley, and with his wines he has created his own school to showcase the best of Pouilly Fumé. And not only that, because in the 20 hectares that he cultivates organically, varieties as well known as Sauvignon Blanc share the plot with other native varieties of the Loire like Chasselas. A work of commitment to the terroir that translates into original, exciting and vibrant wines that are already being praised in the most distinguished wine circles.
An example of this work can be found in Domaine Jonathan Pabiot Pouilly Fumé Léon, a single-variety Sauvignon Blanc from old vines aged between 10 and 50 years old planted on terraces of limestone, clay-limestone and flint soils. The vines are organically cultivated using biodynamic practices and the harvest is carried out manually at the optimum point of ripeness. In the winery, the grapes ferment in stainless steel tanks with native yeasts and a controlled temperature. The wine then ages for 12 months in stainless steel and concrete tanks to respect the purity of the fruit as much as possible.
Named Léon after Jonathan Pabiot’s son, Domaine Jonathan Pabiot Pouilly Fumé Léon is a white wine that truly thrills. A new and exciting Pouilly-Fumé that still has a long way to go in the bottle, but already shows pure brilliance.
