The grapes used to make the Domaine de Chaude écuelle Chablis wine come from plots with vines aged around 40 years old. These vineyards have soils made up of kimmeridgian limestone loams and lie on slopes with varied exposure.
When they reach the winery, the clusters ferment in temperature-controlled tanks. The resulting wine undergoes malolactic fermentation and ages on its fine lees for around ten months.
