Corta y Raspa La Atalaya is a white wine without denomination of origin produced by the winery Mayetería Sanluqueña in Sanlúcar de Barrameda, Jeréz.
Mayeteria Sanluqueña is a project created by oenologist Ramiro Ibáñez with the aim of preserving the tradition to make still wines in Jeréz, from the old vineyards that belong to families from Mayetos (name given to smallholder farmers who make their own wines in Sanlúcar de Barrameda).
The Mayetos have coexisted with the larger producers of the area until the 80s-90s, when they started to disappear as winemakers due to the strict legal requirements of the administration.
With the 2016 vintage Mayeteria Sanluqueña started its journey, launching its first wines made by 3 Mayetos, with the name Corta y Raspa, and the ones of each producer and vineyard, differentiating this unique wines. From this moment, they have expected to add new Mayetos to this interesting project in the upcoming years.
Corta y Raspa La Atalayais a wine made from Palomino from the best vineyard of the farm La Atalaya, cultivated for years by the mayeto José Manuel Harana. The vineyard is located between the more Atlantic farms, the fresher ones, and the farms with more concentration that are located upstream.
The winemaking process is traditional, fermenting the wine in butts without fortification and very little yeast cap (velo de flor).
Corta y Raspa La Atalaya 2019 is a light, sharp wine with structure. Intense on the nose, the typical salty hint of the area stands out. Fantastic for the aperitif and paired with all kinds of fish.
