Claudio Cipressi Falanghina Settevigne is an organic red wine made by Claudio Cipressi with Falanghina variety in the Italian region of Molise in the IGP Terre degli Osci.
Located in San Felice del Molise, in the Italian province of Campobasso, Claudio Cipressi uses his passion and his work to enhance the local terroir. With a 16-hectare estate growing native vines, this winery has become the leading producer of Tintilia, this region’s most representative red variety and one commonly seen in native Italian wines.
Claudio Cipressi Falanghina Settevigne comes from vines planted about 500 metres above sea level on calcareous and clay soils. The cultivation methods used are strictly organic, no chemical products that could harm the natural balance of the terroir are used, and the harvest is carried out manually at the optimum point of ripeness.
In the winery, the Claudio Cipressi Falanghina Settevigne grapes are destemmed and gently pressed. Fermentation takes place at a controlled temperature of 25-28ºC for about 12 days. It then rests on lees in stainless steel tanks for 24 months followed by a final 6 months in the bottle.
