According to Peter Sisseck, “fino is the finest white wine in Spain.” This bold statement drives him to craft one of the country's most intriguing fortified wines, Bodegas San Francisco Javier Fino Viña Corrales Pago Balbaína. 
 
This venture began in 2020 when the Danish winemaker partnered with Carlos del Río senior—and also with Carlos del Río junior—to launch their first creation in the D.O. Jerez-Xérès-Sherry. Following a resounding success—with editions sold out and waiting lists—and despite the challenges posed by Covid-19, the story and business continue today with Bodegas San Francisco Javier Fino Viña Corrales Pago Balbaína. 
 
This success is attributed to various factors. Foremost is the passion and dedication invested in the production of Bodegas San Francisco Javier Fino Viña Corrales Pago Balbaína; secondly, the unique location where this wine originates. Specifically, as its name suggests, Bodegas San Francisco Javier Fino Viña Corrales Pago Balbaína is born in Viña Corrales, an organic vineyard situated in the Pago de Balbaína, cultivated organically. In total, there are 8 hectares of old vine palomino fino, traditionally owned by the Del Río family. 
 
After the harvest, Bodegas San Francisco Javier Fino Viña Corrales Pago Balbaína is pressed and transferred to sherry casks where fermentation takes place. This step is crucial as, following the yeast activity, the renowned 'flor' yeast layer will develop, remaining on the wine's surface for a minimum of three years. This layer of yeast, known as Saccharomyces Beticus, is responsible for isolating the wine (shielding it from oxidation) and bestowing its distinctive characteristics. Finally, after a minimum of three years, Bodegas San Francisco Javier Fino Viña Corrales Pago Balbaína is bottled in spring, precisely when this flor is at its most robust and active.
